Bran Muffins For Digestive Health
Servings: 4 | Prep Time: 30 min

Ingredients
1 cup shortening
4 eggs
2 cups boiling water
6 cups bran flakes
1 quart buttermilk
5 teaspoons baking soda
1 teaspoon salt
2 1/2 cups sugar
5 cups flour


Directions
  1. Pour boiling water over bran flakes and cool. Cream sugar, shortening and eggs. Fold in bran flakes. Fold in flour, soda and salt alternately with buttermilk. Do not over mix. Fold flour in carefully. Bake at 400 degrees for 15-20 minutes. Batter will keep up to six weeks in tightly covered container in refrigerator.
